Ingredients
- 2 Zucchini 700 g
- ½ tsp salt
- 2 eggs
- 3 Tbsp all-purpose flour
- 100 g mozzarella cheese grated
- ½ tsp powdered garlic
- Black pepper to taste
- Vegetable oil for frying
Creamy Sauce
- ½ cup sour cream or Greek yoghurt
- 1 Tbsp fresh lemon juice
- ¼ tsp salt
- Black pepper to taste
- 1 Tbsp fresh dill finely chopped
Instructions
Prepare the Zucchini:
- Grate the zucchini and place it into a bowl. Sprinkle the grated zucchini with salt, stir it together, and let it stand for about 10 minutes. This helps draw out the moisture. After 10 minutes, squeeze out the liquid from the zucchini using your hand or a nut milk bag. Transfer the squeezed zucchini back into a clean bowl.
Mix the Fritter Ingredients:
- To the bowl of squeezed zucchini, add eggs, grated mozzarella cheese, all purpose flour, powdered garlic, salt, and black pepper. Stir the mixture until all the ingredients are well combined.
Cook the Fritters:
- Heat oil in a large pan over medium heat. Using a spoon, scoop out about 1/4 cup of the zucchini mixture and drop it into the hot oil. Flatten the mound slightly with a spatula. Cook the fritters for 3 minutes on each side, or until they're lightly golden brown
