Oats: Whole oats or quick oats can be used interchangeably for this recipe. However, whole oats provide a bit more texture. If you need gluten-free options, make sure to use certified gluten-free oats.

Bananas: you’ll need about 3 medium or 2 large ripe bananas mashed, which should yield approximately 1 cup (230g) of mashed bananas. If you prefer a different fruit flavor, you can swap the mashed banana for unsweetened applesauce.

Applesauce: Unsweetened applesauce is an excellent egg substitute for these baked oats, and I recommend using it instead of eggs. You can also use an egg or even a “flax egg” substitute.

Milk: I recommend using unsweetened oat milk, although any milk will suffice.

Peanut butter: To enhance the flavor of the peanut butter, you’ll need 1/2 cup of any nut butter you prefer, whether it’s natural, homemade, or processed.

Brown sugar: I like to use regular brown sugar in this recipe for that delicious hint of molasses flavor, but you’re welcome to use coconut sugar as well.

Salt: to balance the other flavors.

Chocolate chip: If you want to make these bars vegan, you can use dairy-free chocolate chips instead of regular ones or leave them out altogether. For more variations, you can substitute chocolate chips with peanut butter chips, chopped nuts, or raisins. Go crazy! That’s usually what I do.

Baking staples: To add some extra flavor, vanilla extract and cinnamon are essential.

Baking powder: provides the lift needed for this baked oatmeal to rise correctly.

How to make peanut butter banana baked oatmeal

Prep your pan. Preheat the oven to 355 degrees F (180 degrees C) and grease a 9×13 inch pan with oil or cooking spray to prevent sticking.

Mix your wet ingredients. Mash bananas with a fork. Add all of the wet ingredients to a bowl and whisk them until they’re well combined.

Mix in the dry. Add all of the dry ingredients to the wet ingredients and mix well.

Mix-ins. Fold in the chocolate chips.

Bake it! Pour the peanut butter banana baked oatmeal mixture into your pan, sprinkle with an additional chocolate chips and bake it until the edges are slightly golden brown.

Top it. Add extra banana slices and a drizzle of melted peanut butter!

  • 1 cup mashed bananas (about 3 medium or 2 large ripe bananas) (230g)
  • ½ cup creamy or crunchy peanut butte (125g)
  • ¼ cup coconut sugar or brown sugar (50g)
  • ¼ cup unsweetened applesauce (45g)
  • 2 tbsp chia seeds (30g)
  • ½ cup almond milk (or any nondairy milk) (120ml)
  • cups old-fashioned whole oats or quick oats (not instant) (213g)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • ½ cup semi-sweet chocolate chips (use dairy free for vegan) (80g)

Instructions
 

  • Preheat the oven to 355℉ (180℃) and grease a 9×13 inch pan with oil or cooking spray to prevent sticking.
  • Mash the bananas with a fork. Add all of the wet ingredients to a bowl and whisk them until they’re well combined.
  • Add all of the dry ingredients to the wet ingredients and mix well. Fold in the chocolate chips.
  • Pour the peanut butter banana baked oatmeal mixture into your pan, sprinkle with an additional chocolate chips and bake it for 25-28 minutes or until the edges are slightly golden brown and the center is set.
  • Remove from the oven and allow to cool in the pan at room temperature.
  • Add extra banana slices and a drizzle of melted peanut butter!
  • Cover leftovers tightly and store in the refrigerator for up to 10 days.
