- 1 cup mashed bananas (about 3 medium or 2 large ripe bananas) (230g)
- ½ cup creamy or crunchy peanut butte (125g)
- ¼ cup coconut sugar or brown sugar (50g)
- ¼ cup unsweetened applesauce (45g)
- 2 tbsp chia seeds (30g)
- ½ cup almond milk (or any nondairy milk) (120ml)
- 2½ cups old-fashioned whole oats or quick oats (not instant) (213g)
- 1 tsp baking powder
- ½ tsp salt
- 1 tsp ground cinnamon
- 1 tsp pure vanilla extract
- ½ cup semi-sweet chocolate chips (use dairy free for vegan) (80g)
Preheat the oven to 355℉ (180℃) and grease a 9×13 inch pan with oil or cooking spray to prevent sticking.
Mash the bananas with a fork. Add all of the wet ingredients to a bowl and whisk them until they’re well combined.
Add all of the dry ingredients to the wet ingredients and mix well. Fold in the chocolate chips.
Pour the peanut butter banana baked oatmeal mixture into your pan, sprinkle with an additional chocolate chips and bake it for 25-28 minutes or until the edges are slightly golden brown and the center is set.
Remove from the oven and allow to cool in the pan at room temperature.
Add extra banana slices and a drizzle of melted peanut butter!
Cover leftovers tightly and store in the refrigerator for up to 10 days.
