Ingredients
  

  • 1 cup mashed bananas (about 3 medium or 2 large ripe bananas) (230g)
  • ½ cup creamy or crunchy peanut butte (125g)
  • ¼ cup coconut sugar or brown sugar (50g)
  • ¼ cup unsweetened applesauce (45g)
  • 2 tbsp chia seeds (30g)
  • ½ cup almond milk (or any nondairy milk) (120ml)
  • cups old-fashioned whole oats or quick oats (not instant) (213g)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp pure vanilla extract
  • ½ cup semi-sweet chocolate chips (use dairy free for vegan) (80g)

Instructions
 

  • Preheat the oven to 355℉ (180℃) and grease a 9×13 inch pan with oil or cooking spray to prevent sticking.
  • Mash the bananas with a fork. Add all of the wet ingredients to a bowl and whisk them until they’re well combined.
  • Add all of the dry ingredients to the wet ingredients and mix well. Fold in the chocolate chips.
  • Pour the peanut butter banana baked oatmeal mixture into your pan, sprinkle with an additional chocolate chips and bake it for 25-28 minutes or until the edges are slightly golden brown and the center is set.
  • Remove from the oven and allow to cool in the pan at room temperature.
  • Add extra banana slices and a drizzle of melted peanut butter!
  • Cover leftovers tightly and store in the refrigerator for up to 10 days.
