Healthy Oatmeal Cookies

These cookies are crispy and crunchy on the outside, with a soft and smooth chocolate filling on the inside. Made with wholesome ingredients like oats, ground almonds, and coconut oil, these cookies are packed with nutrients and flavor.

Ingredients
  

  • 3/4 cup oat flour (100 g)
  • 1 cup almond flour (100 g) 
  • 2/3 cup cornstarch (80 g)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup melted coconut oil (70 g)
  • 1/4 cup peanut butter or (any nut butter) (50 g)
  • 1/4 cup plus 2 tbsp maple syrup (80 g)
  • 1/4 tsp vanilla extract

For the filling:

  • 100 g dark chocolate
  • 1/2 cup peanut butter (100 g)

Instructions
 

  • Preheat the oven to 350 F/180 C (top and bottom heat). 
  • Mix the oat flour, almond flour, cornstarch, baking powder, and salt together.
  • Heat the coconut oil until melt completely. Whisk together with the almond butter, maple syrup, and vanilla. Once a homogeneous mass has formed, add to the dry ingredients and combine into a dough.
  • On a lined with parchment paper work surface, roll out the dough (approx. 0.5 cm thick) and cut out round cookies. If the dough is too soft, place the rolled sheet into the fridge. It helps to cut out the cookies perfectly.
  • Bake in the preheated oven for about 15 minutes until golden brown. Remove from the oven and let cool.
  • Make a filling:
    Finely chop the dark chocolate. Melt in the microwave or over the water bath. Add peanut butter and stir until smooth. Allow the mixture to cool slightly and thick. 
  • Assemble:
    Then add about 2 teaspoon of the chocolate mixture (use a piping bag) to one cookie and place another cookie on top, sandwich them. 
  • Pop into the fridge until the chocolate is set (30 min).
  • Store in the airtight container in the fridge for 1 week.
