What you need to make crispy oatmeal cookies

The best part about these healthy oatmeal cookies? They’re easy to make, take only 15 minutes, are made in one bowl and you probably already have all of the ingredients for them in your pantry! You’ll need:

Oat flour: I love the flavor of using Oat flour in these cookies! However, you can also use all-purpose flour or whole wheat flour if you don’t have any oat flour on hand. Super-versatile recipe!

Rolled oats: To get the best texture and flavor combination, reach for old-fashioned oats over instant oatmeal.

Melted coconut oil: Make sure the coconut oil is melted when preparing the oatmeal cookies. You can also swap out the coconut oil for butter.

Milk: I’m using oat milk, but feel free to use any type of milk, dairy or dairy-free. Water works to.

Raw sugar: These oatmeal cookies are perfectly sweet with a little bit of raw sugar. You can also substitute with any sweetener if you’d rather.

Salt: Bring out the sweetness with a dash of salt!

Vanilla: an essential for yummy baked goods.

Baking soda & salt: to ensure these bake up properly.

How to make healthy oatmeal cookies

To get started, preheat your oven to 355F/180C (top and bottom heat) and line baking sheet with parchment paper. Then follow along below.

Whisk the first set of ingredients. That includes the melted coconut oil, raw sugar, milk, salt and vanilla extract.

Stir in the rest of the ingredients. Add the oat flour, rolled oats, baking powder and stir until combined. Add your favorite Add-ins. Allow the mixture to chill in the fridge until the coconut oil has hardened and the dough looks more solid.

Dollop the cookies onto the baking sheet. Use a medium cookie scoop (which is about 2 tablespoons) to dollop 12 cookies. Roll to form a round shape (1 inch diameter). Then use your fingers to flatten the dough into cookie shape.

Bake for about 18-20 minutes, or until the cookies are slightly golden. But be sure to keep your eyes on them!

How to store crispy oatmeal cookies

To store: Pack your leftovers in a bag or container, and they’ll keep for up to one week. You can store them either in the fridge or at room temperature.

To freeze: If you want to save a few sneaky pieces more than one week, you can freeze them! Just make sure to place parchment paper in between each cookie and store in a freezer-safe bag or container. They will be good for up to 3 months.

To defrost: Just let the cookies come to room temperature before eating.

Ingredients
  

  • 1 cup oat flour 130g
  • 1 cup rolled oats old fashioned 100g
  • ¾ tsp baking powder
  • cup melted coconut oil 90g
  • ¼ cup raw sugar (granulated) 50g
  • 3 tbsp milk 45g
  • ¼ tsp salt
  • 1 tsp vanilla extract

Add-ins

  • ¼ cup chopped nuts or dried fruits optional

Instructions
 

  • Preheat your oven to 355℉/180℃ (top and bottom heat) and line baking sheet with parchment paper.
  • Into a large mixing bowl add milk, vanilla extract, melted coconut oil, sugar and salt. Mix until combined.
  • Add oat flour, rolled oats, baking powder. Mix well. The dough will be wet and sticky. That's okay. Allow the mixture to chill in the fridge until the coconut oil has hardened and the dough looks more solid.
  • If you desired, add in the nuts, dry fruits, chocolate chips.
  • Use a medium cookie scoop (which is about 2 tablespoons) to dollop 12 cookies. Roll to form a round shape (1 inch diameter). Then use your fingers to flatten the dough into cookie shape.
  • Bake in the preheated oven
    18 minutes –  for softer cookies with slightly crunchy edges; 
    20 minutes for crispy edges and soft center;
    22 minutes if you want super crispy cookies and want the center to be crisp too (it’s my favorite texture)
    But be sure to keep your eyes on them!
  • Allow to cool 5 – 10 minutes on the baking pan then place them on a wire rack to cool completely.
  • Store them in an airtight container.

    I found this recipe yesterday & decided to bake it last night. And i can tell you i am so very happy with the result! Amazing crispy cookies with right amount of sweetness! Not to mention it is so easy to make. Will bake again soon and i think i need to double ( or even triple ) the recipe. Lol! Thank you for sharing this!
