Healthy Oatmeal Cookies. DIY Prince cookies, but healthier

These cookies are a delicious and healthy alternative to the classic “Prinzenrolle”. They are crispy and crunchy on the outside, with a soft and smooth chocolate filling on the inside. Made with wholesome ingredients like oats, ground almonds, and coconut oil, these cookies are packed with nutrients and flavor. They are perfect for a sweet treat that won’t compromise your health goals.

Ingredients in healthy oatmeal cookies?

The best part about these healthy oatmeal cookies? They’re easy to make, take only 15 minutes, are made in one bowl and you probably already have all of the ingredients for them in your pantry! You’ll need:

Oat flour is one of my favorites to bake with and you can easily make it yourself! Oat flour is a great source of fiber, which helps to regulate digestion and promote feelings of fullness.

Almond flour keeps the cookies gluten free and grain free while also providing healthy fats and lovely flavor. Be sure to use a fine, blanched almond flour.

Cornstarch: is the key ingredient in the recipe that makes the cookies delightfully crispy. Feel free to use tapioca or arrowroot flour instead of cornstarch.

Melted coconut oil: just a bit of coconut oil give these healthy oatmeal cookies the right amount of moisture without having to use butter.

Peanut butter (or any nut butter) is a good source of healthy fats, protein, and fiber. Be sure to use an all natural peanut butter made with just roasted peanuts. This will give you the best texture!

Maple syrup: we’re using just a bit of pure maple syrup to naturally sweeten these healthy oatmeal cookies. It’s a good alternative to refined sugar and can add a delicious, slightly nutty flavor to baked goods.

Dark chocolate: I like to use semi-sweet chocolate, but you could also use milk chocolate.

Vanilla: an essential for yummy baked goods.

Baking soda & salt: to ensure these bake up properly.

How to make healthy oatmeal cookies

To get started, preheat your oven to 355F/180C (top and bottom heat) and line two baking sheets with parchment paper. Then follow along below.

Whisk the dry ingredients that includes the the oat flour, almond flour, cornstarch, baking powder, and salt.

Stir in the rest of the ingredients. Whisk together melted coconut oil with the peanut butter, maple syrup, and vanilla. Once a homogeneous mass has formed, add to the dry ingredients and combine into a dough.

Roll out the dough (1/4 inch (0.5 cm) thick) on a lined with parchment paper work surface. If the dough is too soft, place the rolled sheet into the fridge. It helps to cut out the cookies perfectly.

Cut out your cookies using a circular cookie cutter. Take away extra scraps to re-roll for more cookies. Place them on prepeared cookie sheets and bake at 355F/180C for 15 minutes. Once they are done allow them to cool on the cookie sheets before transferring them to a wire rack to cool completely.

Make a filling

Finely chop the dark chocolate. Melt in the microwave or over the water bath. Add peanut butter and stir until smooth. Allow the mixture to cool slightly and thick. 

Assemble:

Add about 2 teaspoon of the chocolate mixture (use a piping bag) to one cookie and place another cookie on top, sandwich them. Pop into the fridge until the chocolate is set (30 min).

How to store healthy oatmeal cookies

To store: Pack your leftovers in a bag or container, and they’ll keep for up to one week. You can store them either in the fridge or at room temperature.

To freeze: If you want to save a few sneaky pieces more than one week, you can freeze them! Just make sure to place parchment paper in between each cookie and store in a freezer-safe bag or container. They will be good for up to 3 months.

To defrost: Just let the cookies come to room temperature before eating.

Ingredients
  

  • 3/4 cup oat flour (100 g)
  • 1 cup almond flour (100 g) 
  • 2/3 cup cornstarch (80 g)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup melted coconut oil (70 g)
  • 1/4 cup peanut butter or (any nut butter) (50 g)
  • 1/4 cup plus 2 tbsp maple syrup (80 g)
  • 1/4 tsp vanilla extract

For the filling:

  • 100 g dark chocolate
  • 1/2 cup peanut butter (100 g)

Instructions
 

  • Preheat the oven to 350 F/180 C (top and bottom heat). 
  • Mix the oat flour, almond flour, cornstarch, baking powder, and salt together.
  • Heat the coconut oil until melt completely. Whisk together with the almond butter, maple syrup, and vanilla. Once a homogeneous mass has formed, add to the dry ingredients and combine into a dough.
  • On a lined with parchment paper work surface, roll out the dough (approx. 0.5 cm thick) and cut out round cookies. If the dough is too soft, place the rolled sheet into the fridge. It helps to cut out the cookies perfectly.
  • Bake in the preheated oven for about 15 minutes until golden brown. Remove from the oven and let cool.
  • Make a filling:
    Finely chop the dark chocolate. Melt in the microwave or over the water bath. Add peanut butter and stir until smooth. Allow the mixture to cool slightly and thick. 
  • Assemble:
    Then add about 2 teaspoon of the chocolate mixture (use a piping bag) to one cookie and place another cookie on top, sandwich them. 
  • Pop into the fridge until the chocolate is set (30 min).
  • Store in the airtight container in the fridge for 1 week.
